{"id":20907,"date":"2019-01-21T00:05:09","date_gmt":"2019-01-20T23:05:09","guid":{"rendered":"http:\/\/blog.laveredadepuebla.com\/?p=20907"},"modified":"2023-02-10T12:09:31","modified_gmt":"2023-02-10T12:09:31","slug":"migas-serranas","status":"publish","type":"post","link":"https:\/\/blog.sierranortedeguadalajara.com\/?p=20907","title":{"rendered":"Migas serranas"},"content":{"rendered":"<p align=\"LEFT\"><span style=\"color:#000000;\"><span style=\"font-size:small;\">Ahora que aprieta el fr\u00edo es buen momento para hablar de las migas, un <\/span><\/span><a href=\"https:\/\/blog.laveredadepuebla.com\/2018\/11\/22\/gastronomia-de-la-sierra-norte-de-guadalajara\/\"><strong><span style=\"color:#000000;\"><span style=\"font-size:small;\"><i>plato serrano <\/i><\/span><\/span><\/strong><\/a><span style=\"color:#000000;\"><span style=\"font-size:small;\">contundente que se tomaba en almuerzo, comida o cena, seg\u00fan necesidad o conveniencia. <\/span><\/span><a href=\"https:\/\/turismoatienza.es\/recetas\/migas-del-pastor\/\"><span style=\"color:#000000;\"><span style=\"font-size:small;\"><i><strong>La receta<\/strong>,<\/i><\/span><\/span><\/a><span style=\"color:#000000;\"><span style=\"font-size:small;\"> propia de cada lugar e incluso de cada familia, variaba en funci\u00f3n de los tropezones y de lo que hab\u00eda disponible en casa. <\/span><\/span><\/p>\n<p align=\"LEFT\"><em><span style=\"color:#800000;\"><strong class=\"western\"><span style=\"font-size:small;\">Ingredientes b\u00e1sicos<\/span><\/strong><\/span><span style=\"color:#000000;\"><span style=\"font-size:small;\"><span style=\"color:#800000;\"><em>:<\/em><\/span> <span style=\"color:#800000;\">pan asentado (hogaza del d\u00eda anterior), agua, ajos, piment\u00f3n, aceite (manteca de cerdo) y sal. Tropezones: magro de cerdo, torreznos, mollejas , panceta, h\u00edgado, \u2026<\/span><\/span><\/span><\/em><\/p>\n<p align=\"LEFT\"><span style=\"color:#000000;\"><span style=\"font-size:small;\"><a href=\"https:\/\/blog.sierranortedeguadalajara.com\/wp-content\/uploads\/2023\/02\/190116-migas-serranas.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright wp-image-20908\" src=\"https:\/\/blog.sierranortedeguadalajara.com\/wp-content\/uploads\/2023\/02\/190116-migas-serranas.jpg\" alt=\"\" width=\"360\" height=\"203\" \/><\/a>Se corta el pan en rebanadas peque\u00f1as y se humedecen con agua templada, se cubre con un pa\u00f1o y se dejan en reposo de 8 a 10 horas. Se fr\u00eden los ajos <span style=\"color:#800000;\"><em>(sin pelar)<\/em> <\/span>en una sart\u00e9n honda; se apartan y se ponen los tropezones a fuego lento, para que suelten algo de grasa. Sobre esta grasilla se vuelca el pan remojado, se le a\u00f1ade sal y el agua necesaria, removiendo constantemente hasta que empiezan a dorarse. <\/span><\/span><\/p>\n<p align=\"LEFT\"><span style=\"color:#000000;\"><span style=\"font-size:small;\">Justo en ese momento se a\u00f1aden piment\u00f3n y los tropezones, sin dejar de remover y hasta que est\u00e9n doradas del todo. Se serv\u00edan calientes y se tomaban directamente de la sarten.
